HONEY MUFFINS
TIME: 10 minutes prep + 15 minutes cooking
SERVINGS: 12 (12 regular muffin cups; 36 small ones)
INGREDIENTS
6 Eggs
6 TBSP, Honey
4 TBSP. Coconut Oil
4 TBSP Coconut Milk
1/2 TSP. Salt
1/2 TSP. Vanilla
1/2 TSP Baking Powder
1/2 Cup Coconut Flour
1 Cup Chopped Pecans (Optional)
1 Cup Unsweetened Flaked Coconut – shredded for small cups (Optional
DIRECTIONS

Preheat oven to 400º

Mix together eggs, honey, coconut oil, coconut milk, salt, and vanilla (coconut oil will mix better if melted just before putting into mix)

IN A SEPARATE BOWL sift together flour and baking power.

Combine with the wet ingredients

Fold in the OPTIONAL coconut flakes and chopped pecans

Divide batter into 12 muffin baking cups (36 small cups

Bake for 15 minutes
